To sear the pan you need an oil, however, olive oil does not work well, it cannot handle high temperatures. Put the pan on the stove and heat it on low heat. Pour a generous layer of oil into the pan and let the pan heat up slowly. When the oil begins to smoke, remove the pan from the heat and let it cool. Then wipe the excess oil from the pan with kitchen paper. Repeat this process two more times to create a good non-stick layer.
